Vegan cooking and baking is not only good for the animals, the environment and your health, but can also be super easy and delicious. Here you will find an overview of savoury and sweet dishes that are natural and do not use meat substitutes. All recipes are suitable for everyday use – you don't need any special ingredients, but can find everything you need in well-stocked supermarkets. More recipes can be found in vegan cookbooks, which are now available in almost all bookstores, and on the website joeskitchen.de, from which the recipes listed here also originate. The tastiest lentil soup

This lentil soup is really delicious, fills you up and is very healthy! The small pulses are rich in vitamins and proteins. In addition, they are particularly high in iron and zinc.

Linsensuppe
Ingredients | preparation

Ingredients:

2 tablespoons of olive oil 2 cloves of garlic
1 onion 2 tbs tomato paste
4 large carrots 1 large zucchini
One can blended Tomatoes 5 large potatoes
1 litre vegetable broth 190 g lentils
1/2 tsp rosemary powder 1/2 tsp thyme
salt pepper

To serve optionally: fresh parsley, naan bread, roasted sunflower seeds

Preparation:

  • Cook the dish lentils in a pot with water for 30 minutes.
  • Meanwhile, heat the olive oil in another large pot.
  • Chop the garlic cloves and onion finely and fry in the oil.
  • Add the tomato paste and stir.
  • Chop the carrots, courgettes and potatoes, add and sauté for 5 minutes in a pot.
  • Deglaze with the vegetable stock, add the can of tomato pieces, rosemary, thyme, turmeric. Season with salt and pepper to taste and stir.
  • Drain the lentils and put them into the big pot.
  • 15–20 minutes of simmering at medium heat until the rest of the vegetables are nice and soft.
  • (optional) Heat the pan and roast the sunflower seeds in it without fat until they are golden brown. Decorate soup with parsley and sunflower seeds and serve.

Plain tarte flambée

A classic tarte flambée, simple and with only a few ingredients. The vegan sour cream can be made homemade in no time and even preserves for a few days in the refrigerator.

Ingredients for topping:

mushrooms red onion
chives tarte flambée dough

Ingredients for the sour cream:

500 g natural soy yogurt 200 ml soy cuisine
salt, pepper garlic pepper

Preparation sour cream:

  • Mix all the ingredients together and season as much as you like, depending on your taste.
  • Then you can put the vegan sour cream on the prepared pizza or tarte flambée dough or use it for cooking.

Preparation tarte flambée:

  • Preheat the oven to 200 °C.
  • Place the tarte flambée on a baking tray lined with baking paper.
  • Cut the onion into rings, wash and chop the mushrooms and chives.
  • Now spread the tarte flambée with sour cream and spread the other ingredients on top.
  • Bake in the oven for 8-10 minutes on the lowest shelf.

Ingredients | preparation

Ingredients for 4 wraps:

1 pkg. tortilla wraps 1 pkg. small tortilla wraps
1 small onion 1 can of kidney beans
1 can corn ruccola/lettuceSalat
3 large tomatoes 5 large potatoes
1 litre vegetable broth 100 g walnuts
1 pkg. vegan cheese ketchup
vegan mayonnaise pepper, salt

Preparation (see video):

  • Sauté the onions in a pan with oil.
  • Drain and rinse the kidney beans and corn and add them. Then cut the tomatoes into small pieces and add them. Fry briefly on medium heat.
  • Chop the walnuts and add them. Season with salt and pepper and let fry for a few minutes.
  • Layer the wraps:
  • 1st layer: cheese and vegetable mix.
  • 2nd layer: ketchup, mayonnaise and lettuce.
  • Use wrap as a "lid". Fold all corners to center and place wrap in a pan with oil. Please make sure the pan is not too hot, otherwise the outside of the wrap will turn brown too quickly and the cheese will not melt inside. It is recommended to let it fry on the lowest setting. When the wrap is lightly brown, turn once. After that, the wrap can be cut into 2 halves.

Healthy oat biscuits

Crunchy and soft - and super easy. Instead of walnuts you can also use other nuts, fruits or chocolate.

Ingredients:

100 g oatmeal (crunchy) 2 bananas
2 tbsp peanut butter 4 tbsp amaranth
50 g walnuts 20 g coconut flakes
30 g dark chocolate (85%)

Preparation:

  • Preheat the oven to 180 degrees.
  • Mash the banana in a bowl. Chop the walnuts and chocolate.
  • Add all the ingredients to the bananas and mix well.
  • Form 10 medium sized cookies from the dough and place them on a baking tray lined with baking paper.
  • Bake the cookies in the oven for 15 minutes. After 15 minutes, turn the cookies over and bake for another 5 minutes until golden brown.
  • After baking, let the cookies cool on the baking paper or they will become soft.

Cherry crumble cake

A typical family and holiday recipe - especially in the cherry season an absolute must! The base is quickly made and you only need a few ingredients.

Ingredients for the base:

300 g vegetable margarine 300 g sugar
500 g flour 1 pinch of salt

Ingredients for the topping:

2 glasses of cherries

Ingredients for the crumble:

200 g vegetable margarine 200 g sugar
350 g flour 1 pinch of salt

Preparation:

  • Put ingredients for the base in a bowl and knead with your hands until the dough can be formed into a ball. (Do not give up, the dough will definitely firm up). Now roll out the dough onto baking paper. Then slide the baking paper onto the baking sheet.
  • Drain the cherries and lay them out on the base.
  • Now put the ingredients for the crumble in a bowl and knead again with your hands. (This time just until small crumbles form). Then spread the crumble on the cake.
  • Bake at approx. 180 degrees for 30-35 min. until the crumbles are golden brown.

Chocolate banana cake

This cake is incredibly fluffy, moist and you can definitely taste the banana. Along with the chocolate: a dream. Have fun baking this cake.

Ingredients:

160 g wheat flour 1 tbsp cornstarch
1 tsp baking powder 50 g cocoa powder
1/2 tsp salt 50 g olive oil
120 ml almond milk 2 large ripe bananas
50 g sugar 1 tsp vanilla extract
chocolate drops (optional)

Preparation:

  • Preheat the oven to 180 degrees.
  • Put the flour, cocoa, cornstarch, baking powder and salt in a bowl and mix.
  • Put the almond milk, oil, sugar, and vanilla extract in a measuring cup. Mash the bananas with a fork, add them and mix everything.
  • Now add this mixture to the flour mixture and mash up everything.
  • Grease an approx. 25 cm square cake pan and line it with baking paper (the greasing makes the baking paper easily stick to the pan).
  • Pour the dough into the pan and eventually decorate with chocolate drops.
  • Bake the bread for about 30-40 minutes (don't forget to test it with a stick).
